Rollmops

Made of Bismarck fillets that are rolled around dill pickles or onions and fastened with toothpicks.

Pickled herring

Smoked, salt‐cured herring marinated in vinegar and water and lightly flavored with sugar, pickling spices and onions. Served in clear brine or in a sour cream sauce. Sometimes a small amount of wine is added to the brine to make a slightly sweet, clear wine sauce.

Smoked herring

This is a special variation and not really the subject of this article as it is impossible to compare it to pickled herrings. The best known smoked herrings are the Scotch and English kippers, English bloaters and Danish bornholmers.
